When careful ripening produces a true speciality from Carnia.

Cooked at high temperature (50°C), Occhione di Carnia presents a smooth rind of the same pale hay colour as the paste, with flavours ranging from the buttery notes of Latteria Friulano to the sweetness brought about by propionic bacteria. Ideal in the version matured for around 100 days.
