Rare and selected, it is produced once a year in limited quantities. The cheese is matured by placing it inside canvas bags and stored in a cave for about 3 months. It has an irregular shape, no rind, and a semi-hard, crumbly texture. The odour is pungent, rich in aromas that remind of undergrowth, with hints of truffles.
