Zoncolan di Capra is produced from 100% goat’s milk and is ripened for 4 months. It is then aged in extra virgin olive oil and ground pepper. It presents a distinctive flavour with slight hints of goat’s milk on the palate. The paste is compact, slightly crumbly and ivory white in colour.
